Bruschetta -

A favorite snack of the Italian contadino (farmer), now enjoyed by all that appreciate fine tasting oil. A thick slice of bread is toasted over wood charcoals; once the right color and toast effect is achieved the slice of bread is prepared. Here is the most typical recipe but experiment - add some grated mozzarella or roated red peppers; Whatever pleases your pallete:

Cut Italian Country style bread into one-inch slices, and toast to likeness.

Drizzle each slice with Extra-Virgin Olive Oil (we strongly reccommend Lucania).

Squeeze juice from a ripened tomato, or place a thin slice of tomato, on the slice of toasted bread.

Add a pinch of basil, sea salt to taste.
